Brain Boosting Turmeric & Sweetcorn Pancakes

I have grown up with this recipe since the start of secondary school. I still have the A4 piece of paper with the printed recipe on that I was given in my food tech lesson back in Year 8. Granted its a bit manky now but I've kept it for reference for over 20 years just incase I forget how many cups of flour to use and to remind me how this simple recipe has been so useful to me at every stage of life.

Now I've pimped it up and made it bigger and better! Focusing on the benefits of food for children and pregnant/ postpartum women I've added turmeric and black pepper into the mix.




Turmeric is big news! It contains a compound called Curcumin which has multiple anti-oxidant and anti-inflammatory properties which contribute to a healthier you! The amount of curcumin in turmeric is very small so it is more effective to take a Curcumin supplement if you want the full benefits however adding turmeric into daily meals will help increase the amount of anti oxidants in your diet. Eating turmeric with black pepper (containing piperine) will enhance the absorption into your blood.


Here are a few reasons why adding turmeric to your food will bring health benefits to you and your children.


*Turmeric helps the liver to detox and therefore helps eliminate excess oestrogen

and balance our hormones.

* It helps to aid digestion

* It helps boost your mood to avoid depression

* It has been shown to contribute to increased brain function and the growth hormone (BDNF)

* It helps fight infections and contributes to repairing damage


If you want to make these simple pancakes for a quick snack here is the recipe:


Ingredients

3 tbsp of flour (I used gluten free)

1 egg

pinch of salt

handful of cheddar cheese (or to your liking)

4 tbsp of sweetcorn

black pepper

tsp of turmeric

2 tbsp of nut milk or dairy milk


Method

Combine flour, egg an milk and whisk.

Add salt, pepper and turmeric and stir

Finally add the cheese and sweetcorn and stir

Heat some oil in a pan on a medium heat and add a tablespoon of mixture to make one pancake.

Fry for 30 seconds then flip over.

Enjoy your yellow, cheesy, sweet pancakes...Mmmmmmm!
