Kimchi Fried Cauliflower Rice

Perhaps you are looking to eat a healthier diet this year, or maybe you just want to try something new. I’ve created a series of healthy, vegetarian, gut friendly, low in sugar recipes to kick start your New Year!

There are lots of new independent small businesses making fermented foods like kimchi and sauerkraut and with the many benefits that come from eating fermented products I wanted to create new ways to incorporate it into your diet.

I help a lot of clients with gut related health issues and cooking meals low in sugar, incorporating fermented foods and lots of vegetables are a great way to support your gut health.


This recipe is adaptable so if you don't want to use cauliflower swap it out for brown rice or quinoa. If you want to add meat you could fry it with bacon. Instead of the egg on top you could add chicken or chickpeas.


Takes 20mins Serves 4


Ingredients

1 Head of Cauliflower (medium, chopped into florets)

15mls of coconut oil

300g of kimchi (liquid drained)

36g tamari

15mls of apple cider vinegar

1 g of black pepper

18g of sesame seeds

10mls of sesame oil

3 stalks of spring onion

160g of frozen peas (thawed)

4 eggs


Method

Use a food processor to process your cauliflower florets into a rice-like consistency. If you don't have a food processor you can grate the cauliflower to a similar consistency. Transfer to a bowl and set aside.


Heat coconut oil in a large skillet over medium heat. Add kimchi and cauliflower rice then saute for 5 minutes.


Add in tamari, apple cider vinegar, black pepper, sesame seeds, sesame oil, green onion and green peas.


Stir well to mix and saute for another 2 to 4 minutes or until heated through. Reduce heat to lowest setting. In a separate frying pan, fry your eggs.


Divide kimchi fried rice between bowls and top with a fried egg. Enjoy!
