GF High Fibre Seed & Nut Loaf



Introducing my delightful vegan and gluten-free bread, crafted to nourish your body with fibre, protein, vitamins, and minerals, all in one scrumptious slice.

Whether it's kickstarting your morning or curbing those midday cravings, this bread is your go-to solution for lasting satisfaction. With a texture reminiscent of hearty rye bread, its flavour profile is entirely customisable, allowing you to indulge your taste buds with your favourite ingredients. For this recipe I've chosen caraway seeds and smoked salt.


And the best part? It's incredibly simple to prepare. No need for lengthy waiting periods; just mix, pop it in the oven for an hour at a low temperature, and voila – your nutritious bread is ready to enjoy.


But what sets this bread apart from the rest? Let's dive into the goodness it brings:

First up, flaxseeds – nature's treasure trove of omega-3 fatty acids, renowned for their anti-inflammatory properties. Not only do they promote healthy skin, but they also aid in cholesterol regulation by hindering its re-absorption in the colon. Plus, flaxseeds contain phytoestrogens, which, when converted by intestinal flora, can combat breast cancer.

Moreover, flaxseeds are great for digestive health, thanks to their high dietary fibre content, just like chia seeds. Together, they work wonders in promoting regular bowel movements, ensuring your gut stays happy and healthy. And the best part? Flaxseeds maintain their stability even under baking temperatures, making them ideal for all your culinary adventures.

And let's not forget about oats – a powerhouse of beta-glucan fibre, known for its ability to lower cholesterol levels and regulate blood sugar. Whether you're managing type 2 diabetes or simply aiming for steady energy levels throughout the day, oats have got you covered.

So, why settle for ordinary bread when you can indulge in this wholesome delight? Elevate your breakfasts and snacks with our vegan, gluten-free creation, crafted with love and packed with goodness.


Ingredients:

130g of sunflower seeds

90 grams of flaxseed

60g of hazelnuts

145g of rolled oats

2 tbsp of chia seeds

4 tbsp of psyllium husk powder

1 tsp of smoked sea salt (or regular sea salt)

1 tbsp of coconut sugar

3 tbsp of olive oil

1 tbsp of caraway seeds

350ml of water


Method:

Combine all dry ingredients in one bowl and mix together

Combine all wet ingredients together then add it to the dry mixture bit by bit. Stir until the mixture is combined.

Pour into a 9" x 5" loaf tin and leave to sit on the counter for at least 30 minutes.

Pre-heat the oven to 180 degrees.

Cook for 20 minutes in the loaf tin, then remove, turn upside down and cook for another 40minutes or until a knife lifts out clean.

Let in cool in the loaf tin to help it hold it's shape

Slice and serve with your preferred selection of toppings.
